Independent butchers are the perfect retailers to offer the customer locally sourced, traceable produce served with top-quality expertise and care. Instead, it is more common to see a butcher’s counter within a modern supermarket, reflecting the modern demand for convenience. Over the last 25 years, the number of independent butchers in the UK has reduced by 60% to approximately 6,000, largely due to the increasing influence of large supermarket chains. Due to the personal nature of specialised butchers’ shops, this Publication takes on a unique voice of the industry containing interviews with butchers of various avenues. The publication makes use of quality photos of the shops and butchers themselves in their day to day surroundings. The interviews pinpoint the change in shopping trends and the pressure independent butchers undertake against large retailers, reflecting on our fast-passed society where convenience has taken over quality, ultimately putting skilled craftsmen and women out of work. The design of the book has an aim to conjure feelings of quality of a bespoke nature and heritage through a case bound cover and a high-quality silk 170gsm paper stock. These pages are intercepted with unadorned and honest interviews on red and laid out to reflect butcher’s invoices.
